Povzetek

Ker je pojem trajnost izjemno širok, smo v prispevku analizirali vidike trajnosti ter jih tipizirali v okoljsko trajnost (ekološka pridelava surovin, upravljanje z vodami v kmetijstvu, zmanjševanje uporabe plastike v proizvodnji in predelavi), socialno trajnost (dosegljivost zdrave hrane vsem generacijam, odkup surovin po kratkih verigah in povezava z lokalnimi dobavitelji) ter ekonomsko trajnost (krepitev lokalnega trga, vključenost in povezovanje malih podjetnikov). Ugotovili smo, da so vidiki trajnosti precej skriti in da se o njih v izobraževalnem procesu premalo govori, kar smo ponazorili tudi s primeri iz učnih načrtov. V drugem delu prispevka so predstavljeni inovativni pristopi, ki bi jih morali vključiti v sodobno izobraževanje (terensko delo z ogledi dobrih praks, digitalna tehnologija z aplikacijami in vrednostni vidiki pomena zdrave hrane kot etični vidik).

Abstract

Understanding Sustainable Development

The term sustainability is very broad. This article analyses the aspects of sustainability and categorizes them into environmental sustainability (organic production of raw materials, agricultural water management and plastic reduction in the production and processing sector), social sustainability (accessibility of healthy food to different generations, purchasing raw materials through short chains and working with local suppliers), and economical sustainability (building the local market, participation and cooperation from small businesses). It has been established that aspects of sustainability are still quite hidden and insufficiently discussed during the educational process. This has been demonstrated with examples from different syllabi. The second part of the paper presents innovative approaches that should be implemented in modern education (fieldwork, including an examination of good practices, use of digital technology and applications, and different value aspects of the importance of healthy food as an ethical aspect).
